Keto Cobb with Sugar-Free Balsamic Herb Dressing

This amazing, decadent and easy-to-prep salad will keep you full all day AND help you meet your keto macros. While the recipe below doesn’t fit the Keto macros perfectly (67% fat, 20% protein, 13% carbs) a few little tweaks will make this delicious salad even more keto-friendly. Removing the corn, cucumbers, and reducing the greens will bring this recipe to 70% fat, 20% protein, and 10% carbs.

To keep the dressing high-fat and low-carb, we used stevia instead of sugar, but any sugar-free sweetener will work! Adding fresh, seasonal herbs will elevate this dressing and bring even more flavor to the salad. In the spring and summer, we like to add fresh basil and chives. In the fall and winter months, any mix of savory herbs are great. Our favorite is rosemary and thyme!

Dried herbs are great in this dressing as well but we prefer fresh herbs especially when making this dressing in bulk, as the oils in the fresh herbs will become infused in the dressing.

  • 1 Bacon Pork Stick
  • 1/8 Cup Sweet Corn

Instructions
  1. Hardboil eggs. Place in cold water and set aside.
  2. Whisk dressing ingredients together and set aside.
  3. Dice Vermont Smoke & Cure Bacon Pork Stick.
  4. Slice avocado.
  5. Slice cucumber.
  6. Crumble blue cheese.
  7. Peel eggs and cut in half.
  8. Dress greens.
  9. Top dressed greens with prepped ingredients.
  10. Garnish with lemon.
